Ingredients
  

  • I pound Italian sausage or meatballs
  • 1 tbsp olive oil
  • 1 1/2 cups carrots, diced
  • 1 onion, diced
  • 3/4 cup celery, diced
  • 1 1/2 tbsp garlic, minced
  • 10 cups chicken broth
  • 1 cup orzo, dried
  • 6 ounces fresh spinach
  • salt and pepper
  • Parmesan cheese, grated

Instructions
 

  • In a large soup pot, brown the meatballs or sausage in olive oil. Add in carrots, celery, onions and garlic. Sauté until veggies have softened. Pour in chicken broth and season with salt and pepper to taste. Bring to a boil. Add in pasta and cook for about 10 minutes, or until pasta in tender. Immediately before serving, add in spinach and stir. Serve warm and garnish with parmesan cheese. Enjoy!
